LEMON MERINGUE PIE - COOKING WITH KINGSLEY


Here at BeChallenged we love to challenge ourselves in all walks of life, one of these paths for Lead Program designer Kingsley Seale is cooking. Below you will gain insight into what Kingsley likes to cook for a sweet treat. Thats right Kingsley despite being ridiculoursly tall and obsessed with rugby he also has a sweet tooth. ENJOY!

 

Lemon Meringue Pie (Feeds 6 people)


Ingredients

 

Meringue Base

  • 4 egg whites
  • 1 and a quarter cups of castor sugar
  • 1 teaspoon of lemon juice
  • 2 teaspoons of icing sugar

 

Lemon Filling

  • 5 tablespoons of corn flour
  • half cup of sugar
  • 1 cup of water
  • 2 teaspoons grated lemon rind
  • 1/3 cup of lemon juice
  • 30g of butter
  • 4 egg yolks
  • half cup of thickened cream


Instructions

 

Meringue Base

  • Lightly grease a round dish and dust with corn flour (shake off the excess)
  • Mix egg whites, castor sugar and lemon juice in a small basin and beat with an electric mixer for 15 minutes
  • Fold in the sifted icing sugar to the mix
  • Spread the mix into the greased dish (you can pipe around the outsides to create a more decorative look)
  • Bake at 100 degrees celcius for 1 - 1 and half hours turning every 15 minutes
  • Remove from the oven when the meringue begins to brown and leave to cool

 

Lemon Filling

  • Heat a pan and add in water, corn flour, sugar, lemon rind and lemon stirring constantly, thickening the mixture
  • Reduce the heat and simmer for one minute
  • Take the mixture off the heat and add in the butter and egg yolks, mixing until consistent
  • Cover the pan in glad wrap and cool to room temperature
  • Once at room temperature stir in the thickened cream and pour into your meringue base


Serving Instructions

 

  • Serve with cream, ice cream and/or fruit (kiwi fruit or oranges work well)
  • Best served at room temperature
